Recipe

I found a yummy and healthy recipe that we tried tonight and I wanted to share it. I have been training for my first 5K and they tell me that running is easier if you have a healthy diet. I'm all about making my running easier (cause if it gets any harder I'll probably quit!), so I've been trying to cook healthier. This was so easy and my family seemed to like it.

Chili

1 onion, chopped
1 yellow pepper, chopped
1 green pepper, chopped
4 cloves garlic, chopped
3 tomatoes, chopped
1 pound ground beef, cooked and drained --- (I used ground turkey)
1 can black beans, rinsed
1 can garbanzo beans, rinsed
1 can tomato sauce
1 can diced tomatoes
1 bunch swiss chard, carefully washed and torn --- (I used kale)
salt, pepper, chili powder and cumin to taste

Over medium high heat, start cooking the veggies in the order you see here. Add the swiss chard last to maintain the green-ness.

Garnish with low-fat cheese and diced avocado.

Cynthia,

I'm not so incredible! Just a 5K. The marathon is a year or so away!

A 5K are you kidding me! I would rather cut of my legs!!! J/K! I always ask Marlon why are you running if no none is chasing you!!! Good luck! Cute Easter pic.s! You really don't know how luck you are to have all of those sisters and cute nieces! I wish my kids had more cousins. They only have 3 and we don't see them much! My older girls get bored because there is never anyone for them to play with! If you ever want to add a few more to your family we are adoptable! We used to do Christams eve, wht not Easter eve!!! HAHA!!!
